🌿 FULL RECIPE🌿
YIELD; 6 servings
PREP TIME; 10 minutes
TOTAL TIME: 30 minutes
INGREDIENTS
Pulled “Pork”
1 can (14 oz) heart of palm
2 cups enoki or shiitake mushrooms
1 cup of water
1 large onion , finely diced
3 cups of your favorite BBQ sauce ( I like Lawry’s Caribbean Jerk Sauce).
6 hamburger buns
Slaw
2 cups chopped cabbage
½ cup carrots, shredded
¼ cup cilantro,chopped
1 cup poppy seed dressing ( I like
Brianna’s Homestyle Dressing)
Garnish
Pickled onions
Cilantro
INSTRUCTIONS
Slaw
Combine cabbage, carrots, cilantro and dressing.
Let chill in the refrigerator while preparing pulled mushrooms and palm.
Pulled “Pork”
In a crock pot or skillet combine whole mushrooms, whole heart of palm, water, onions and 2 cups of BBQ sauce.
Heat on medium low heat for 20-30 minutes.
Take two forks and pull through mushrooms to pull apart. If they have cooked enough the should slide into a pulled pork easily. If mushrooms are tough to pull apart leave on for another 5-10 minutes.
Pull heart of palm and mushrooms apart by running the fork through the middle (see video)
Add the other cup of BBQ and let simmer for 5 minutes.
Garnish with pickled onions and cilantro and serve.
