#lunchideasforbacktoschool #backtoschool #veganrecipes today i showed you some of my favorite back to school lunch ideas!! they are vegan, healthy and easy – they take less than 30 minutes and can be prepared ahead of time!

• vegan schnitzel tofu wrap : 01:23
– slice your tofu into strips, put them in the cornstarch mixture and then transfer to the bread crumbs mixture.
– air fry your tofu for about 10 minutes on the highest tempeture.
– slice some mushrooms and put them in oil on the stove, and couple minutes later add some spinach.
– cut cucumber, tomatoes and lettuce.
– heat your tortilla on the stove for a few seconds just so it can crisp up a little.
– spread your vegan cream cheese on the tortilla and stack everything together.
– fold your torilla nicely (not like me haha)

• cold soba noodle salad : 04:31
– prepare your soba noodles according to packaging instructions.
– deal with the mushrooms I did in the tofu wrap.
– put your asian slaw mix inside a salad bowl (or a container) and cut your cucumber into matchsticks and put them in the bowl as well. Add your mushrooms later.
– add your drained soba noodles to the salad bowl and mix.
– sauce : 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sriracha, 1 tbsp sesame seeds, little bit of a lime juice (for 2 serving size).
– mix everything together and top it off with some white&black sesame seeds!!

• rice paper rolls : 06:33
– cut your tofu into sticks and cover with cornstarch, fry them on the pan with a little amount of oil.
– peel your sweet potato and cover with olive oil, garlic powder and cornstarch. Put this in the air fryer.
– cut some lettuce, red bell pepper, cucumber and use the asian slaw mix.
– take one rice paper and dip it in room tempature water and transfer to a plate when it’s very thin.
– start layering everything in and roll it up.
– once finished, decorate with white&black sesame seeds
