You’re going to LOVE these recipes! I am so excited to share with you these summer inspired, vegan recipes with you. I absolutely love eating bright, colourful and fresh meals in the summer and today I share a few of my favourites.

Recipes

Protein Nice Cream
1 Frozen Banana
1.5 Cups Frozen Berries
1/3 Cup Non-Dairy Milk
1 Scoop of Plant Protein Powder

Blend and enjoy on it’s own or add to a bowl of chopped fruit and granola like I did!

Warm Chickpea Salad w/ Creamy Avo Dill Dressing
2 Cloves of Garlic
1/2 Onion
3/4 Cup Frozen Corn
1 Can of Chickpeas (drained/rinsed)
1/2-1 tsp paprika
1/2-1 tsp chili spice
Sauté these together with a splash of water (or oil if you prefer) until cooked! Add to a bed of greens and top with sauce (below)!

Creamy Avo Salad Dressing
1/3 Cup Fresh Dill
1/2 Ripe Avocado
1/2-1 tsp Onion Powder
1/2-1 tsp Garlic Powder
1 Lemon Juice + some of the peel
2 cloves of fresh garlic
1 Date
Salt/Pepper to taste
1 Cup of Water

Blend together until smooth!

BBQ Tofu, Mango & Quinoa Salad w/ Creamy Mango Ginger Dressing
Marinade Tofu in BBQ sauce and bake @375 F for 30-40 minutes.
Cook 2 (or so) cups of dry quinoa according to the package instructions.
1 Cup of Fresh Peas
1 Cup of Corn
1/2 Cup Purple Cabbage
1/2 Cup Bell Pepper
1 Large MangoChop cabbage, bell pepper, mango and add to a large bowl. Add peas and corn and mix well. Add cooked quinoa (after it has cooled). Top with Mango Ginger dressing!

Mango Ginger Dressing
1 Large Mango
1 Chunk of ginger
1 Lime (juice and some of the rind)
1/2 tsp cumin
Salt/pepper to taste
1/3 Cup of Water

Blend all ingredients together until smooth!
