A perfect bite-size lunch for kids! Epicure’s Mini Lunchbites are a healthier alternative to heavily processed, pre-packaged lunch kits, which can have as much as 800–900 mg of sodium per serving!
2 Tbsp light cream cheese
2 mini whole-wheat bagels
1 tsp Lemon Dilly Dip Mix
2 lean, low-sodium turkey slices
10 grapes
Preparation
Split bagels in half and wrap up. Stir cream cheese with Lemon Dilly Dip Mix and pack into a small container.
Pack turkey and grapes into separate small containers. Pack all containers in an insulated lunch bag or box and include a plastic knife to spread cream cheese mixture.
10-Minute Silicone Steamer Granola Bars- https://alisabraun.epicure.com/…/10-minute-silicone-steamer…
1 C quick oats
1/4 C whole-wheat or gluten-free flour
1/4 C chopped dried fruit, – your choice
2 tsp Apple Pie Spice
1/4 C honey
1/4 C nut butter or seed butter, – your choice
2 Tbsp unsweetened applesauce
Vegetable oil
Preparation
Combine first 4 ingredients in a medium-size bowl. Stir to blend and set aside.
Combine honey and nut butter in a small bowl and microwave for 30 seconds, until smooth. Add applesauce.
Add wet mixture to dry ingredients and stir quickly until well-combined.
Using Basting Brush, lightly brush Rectangular Steamer with oil. Spread mixture evenly, pressing firmly to remove any air pockets.
Microwave, uncovered, on high for 2–3 minutes or until firm to the touch.
Let cool completely before cutting. Use a sharp or serrated knife to cut into bars. Store in an airtight container in the fridge for up to 1 week.
Tip: Mix 1/2 cup (125 ml) chocolate chips straight into the recipe. Or, once you have cut the Bars, drizzle with melted dark chocolate!
Berry Healthy Muffins- https://alisabraun.epicure.com/…/lunc…/berry-healthy-muffins
1 C low-fat milk
1 large egg
1 tsp vanilla extract
4 tsp vegetable oil
1 C whole-wheat flour
1 C quick oats
1/4 C wheat germ
1/4 C sugar
2 tsp baking powder
1/4 tsp Cinnamon (ground)
1/4 tsp Sea Salt (Grinder)
1 C fresh or frozen berries
Preparation
Preheat oven to 400° F. Lightly grease a Perfect Portion Muffin Pan.
Whisk together milk, egg, vanilla extract and oil in a small mixing bowl.
In a second bowl, whisk flour, oats, wheat germ, sugar, baking powder, Cinnamon and salt. Add berries and toss to coat with flour mixture.
Pour wet ingredients into centre of dry ingredients. Mix with swift strokes using a wooden spoon until just combined. Batter will be slightly lumpy.
Spoon into prepared muffin pan.
Bake for 20–25 minutes, or until golden. Cool on cooling rack.
Hot Mexican Pinwheels- https://alisabraun.epicure.com/…/lunc…/hot-mexican-pinwheels
1/4 C light cream cheese
1/2 C grated low-fat cheese
1 Tbsp finely diced red pepper
2 tsp diced jalapeño peppers (optional)
1 green onion, finely diced
1 tsp Fajita Seasoning
4 tortillas
Preparation
Blend first 6 ingredients.
Spread mixture evenly over each tortilla.
Roll tightly in plastic wrap. Refrigerate for 2 hours, or up to 3 days.
Preheat oven to 450° F
Slice rolls into 1″ (2.5 cm) rounds and place seam side down on Sheet Pan lined with Bake & Roll.
Bake 5-7 minutes.
Tip: Serve with your choice of prepared Epicure Salsa.

¼ cup canned black beans, rinsed and drained
½ cup roasted sweet potato
½ red bell pepper, cut into strips
½ avocado
sliced red onion

1 whole wheat tortilla
2-3 leaves Romaine lettuce
½ cup cooked chicken, shredded
2 tbsp hot sauce
1 carrot, julienned
1 celery rib, julienned
¼ cup blue cheese, crumbled
Smoked Salmon Wrap
1 whole wheat tortilla
¼ cup cream cheese
1 tsp prepared horseradish
2 tsp fresh dill, chopped
½ English cucumber, finely sliced
2-3 radishes, finely sliced
sliced red onion
Western Breakfast Wrap
1 whole wheat tortilla
2-3 leaves Romaine lettuce
4 slices ham
2 eggs, scrambled
½ bell pepper, chopped
