-COOK 1 BOX OF ROTINI PASTA, DRAIN, + RINSE WITH COLD WATER
-CHOP UP THE FOLLOWING VEGETABLES + CHEESE (+ SALAMI IF YOU LIKE) INTO BITE SIZE PIECES: 1 CUCUMBER, 1/2 RED ONION, PINT OF GRAPE TOMATOES, 1 BELL PEPPER, I ALSO ADD A FEW HANDFULS OF BLACK OLIVES, FEW TBSP OF MINCED GARLIC + 1/2 CAN OF GARBANZO BEANS
-ADD HALF BOTTLE OF NORTHERN ITALIAN DRESSING + PLACE IN THE FRIDGE FOR A FEW HOURS, ADD THE REST OF THE DRESSING BEFORE SERVING
-PREP CLAMS BY SOAKING THEM IN COLD WATER FOR AT LEAST 20 MINUTES THEN RINSE

It’s summer and that means we all need some refreshing drinks to beat the heat! These are all non-alcoholic drinks but I give a suggestion if you want to add booze so whether you’re making these for your family or for a party I got you covered!
♡ RECIPES:
Iced Peach Green Tea (serves at least 2):
1 peach herbal tea bag
1 green tea bag
2 fresh peaches, peeled and diced
3/4 cup sugar
3/4 cup water
mint & more peach for serving
ice!!!
1. Add tea bags to a pot or mug and steep in hot water for 5 minutes. Add ice cubes to cool it down or leave in fridge overnight.
2. For the simple syrup, add sugar, 3/4 cup water and fresh peaches to a pot and bring to a simmer. Stir frequently, and simmer about 10 mins.
3. Assemble the drinks with ice, fresh peach and mint. Then add the tea and simple syrup to taste.
Frozen Strawberry Lemonade (serves 2):
1 cup frozen strawberries
2-3 tbsp sugar
juice of 1 lemon
1/2-3/4 cup water
1. BLEND ALL TOGETHER 🙂
Banana Bread Milkshake (serves at least 2):
1/2 frozen banana
oat milk to blend
cinnamon-flavoured ice-cream or vanilla ice-cream with a pinch of cinnamon added (1 large scoop per person)
1/2 cup of ice

Lemon pesto, pepper and anchovies, and onions and eggs: 3 delicious sauces to serve with dried pasta from the beautiful island of Procida, just off Naples. Five lovely nonne got together to share their favourite ways of cooking pasta through the summer months.
For the lemon pesto: peel and juice of 2 lemons, 100g walnuts/almonds/pinenuts, 20g grated Parmesan, 1 garlic clove, 15g each of mint and parsley, around 50ml extra virgin olive oil
For the onions and eggs: this isn’t really a recipe, but 1 onion, sliced and fried in plenty of olive oil. 6 eggs. Enza and Adriana fry these until hard, but I’ve also made it with the yolks still runny.
For the peppers and anchovy sauce: 400g filleted anchovies, 700g green peppers, pointed kind, 700g fresh tomatoes, chopped, 3 garlic cloves in total (one for the stock), evoo, as needed. The poaching approach makes this a lighter dish than simply frying everything in oil.
