This is an easy and healthy recipe that could easily be taken on the go in a container to school or work! It’s delicious and simple, I hope you’ll try it out!

Ingredients:
1 cup spinach (washed, with stems torn off)
1 red bell pepper, diced
2 cups of rice (i used jasmine rice, but use whatever you want)
1 can of chickpeas (rinsed, drained)
season to taste with: sea salt, garlic pepper, turmeric, paprika, sweet ginger garlic and dried parsley flakes.
Bring a small pot of water to a boil.
While the water is beginning to boil, prep your veggies, then drain and rinse the chickpeas.
Once the water has come to a rolling boil, add in your rice and let it cook for 10 minutes. Once its boiled, drain water and set it aside in a bowl.
Meanwhile, put a large skillet on medium heat and lightly add oil to the pan. (If you’re oil free, then use water instead!)
Add in your bell peppers and seasonings, and saute until they become soft. Then add your spinach and pour a small amount of water into the pan to help the spinach wilt quicker. Once the spinach has wilted, lastly add the chickpeas and saute until they have heated through.
Spoon the chickpea mixture over the rice and enjoy!
