Chicken Club Lettuce Wrap
3-5 large romaine or bibb lettuce leaves
1 cup chicken, cooked and shredded
1 avocado, sliced
½ cup cherry tomatoes, halved
3 bacon slice, cooked and chopped
1 tbsp ranch dressing

Vegetarian Lettuce Wrap
1 cup extra firm tofu, crumbled
½ cup cremini mushrooms, finely diced
¼ cup onion, finely diced
2 garlic cloves, minced
2 tsp ginger, freshly grated
2 tbsp hoisin sauce
1 tbsp soy sauce or tamari
1 tbsp rice vinegar
1 tsp sesame oil
1 tsp chili flakes
oil

Toppings:
3 large romaine or bibb lettuce leaves
⅛ cup green onion, sliced
¼ cup carrot, shredded
Sesame seeds for garnish

In a large pan over medium-high heat, add oil. Add onions and mushrooms and cook for 2-3 minutes, or until onions soften. Add tofu and cook for another 5 minutes. Add garlic and ginger and cook until fragrant. Add hoisin sauce, soy sauce, rice vinegar, sesame oil and chili flakes. Mix well. To assemble wraps, spoon tofu mixture into the lettuce leaves and top with carrot, green onion and sesame seeds.
Enjoy!

Mango Shrimp Wrap
3-5 large romaine or bibb lettuce leaves
1 cup cooked shrimp, peeled and chopped
¾ cup mango, diced
1 chili, minced
¼ cup cucumber, finely diced
¼ cup red onion, finely diced
1 tbsp cilantro, chopped
1 lime, juiced
Salt and pepper to taste

Top lettuce leaves with shrimp, mango, cucumber, red onion. Garnish with chili, cilantro and fresh lime juice.
Enjoy!

Apple Pecan Chicken Wraps
Filling:
½ cup greek yogurt
1 tsp rosemary, finely chopped
1 tbsp dijon mustard
1 tsp honey (optional)
1 chicken breast, cooked and shredded
1 apple, diced

Toppings:
3-5 large romaine or bibb lettuce leaves
¼ cup pecans, chopped
¼ cup dried cranberries

In a large bowl, whisk together yogurt, rosemary, dijon and honey. Add chicken and apples, and mix well. Assemble wraps by filling lettuce leaves with chicken mixture. Top with pecans and cranberries.
Enjoy!

Taco Wraps
Filling:
1lb ground turkey
½ cup onion, finely diced
1 red pepper, finely diced
2 garlic cloves, minced
2 tbsp taco seasoning
Salt and pepper to taste
oil

Toppings:
3-5 large romaine or bibb lettuce leaf
2 tbsp sour cream
¼ cup cheddar, shredded
Cilantro for garnish

In a large pan over medium-high heat, add oil. Add onion, red pepper and cook for 2-3 minutes. Add turkey and continue to cook until everything is cooked through. Add garlic, taco seasoning and salt and pepper to taste. Cook for another minute or until garlic is fragrant. Assemble tacos by filling lettuce leaves with taco mixture. Top with sour cream and cheddar cheese. Sprinkle over cilantro.
Enjoy!

INSTRUCTIONS:

– These soups can be made 2-3 ahead and stored in the refrigerator.
– I recommend allowing the soups to sit at room temperature for 5-10 minutes before adding your water so the ingredients will heat better.
– Once you’ve filled the jar with water, replace the lid, shake it up and then let it stand for 5 minutes (6-8 for the tortellini) or until the veggies have softened.
– Only use cheese tortellini. Meat tortellini will not have enough time to cook properly.
– You can also make these in the microwave – simply top the jar with cold water and then microwave for 1-2 minutes on high. Remove the jar from the microwave, screw on the lid and let stand for 2-3 minutes before enjoying.

Chicken and Cauliflower Rice Soup
1-2 tsp vegetable or chicken base
½ cup chicken, cooked and shredded
½ cup spinach, chopped
½ cup cauliflower rice
¼ cup frozen peas and carrots
1 tsp dill, chopped

Tortellini Soup
1-2 tsp vegetable or chicken base
1 tbsp tomato sauce
½ cup kale, chopped
1 cup fresh cheese tortellini
1 tsp parsley, chopped
1 tsp basil, chopped
Red pepper flakes to taste

Shiitake Miso Soup
1 tbsp miso paste
1 tsp chicken or vegetable base (optional)
½ cup vermicelli noodles
¼ cup broccoli, finely chopped,
¼ cup carrots, shredded
⅛ cup water chestnuts, sliced
½ cup shiitake mushrooms, sliced
½ tsp ginger, freshly grated
1 tbsp green onion, sliced

Black Bean and Corn Soup
1-2 tsp chicken or vegetable base
1 tbsp salsa
¼ cup canned black beans, rinsed and drained
½ cup chicken, cooked and shredded
¼ cup corn kernels
1 tsp cilantro, chopped

Pesto Chicken
1-2 tsp chicken or vegetable base

Gobble | Two Back-To-School Lunch Ideas | Easy Lunch Recipes

Prep Time: 30 minutes
Serves : 10-12 pcs

Ingredients:

Vegetable Dahi Sandwich
200 gm hung curd
½ cup boiled chopped carrots
½ cup boiled green beans
¼ cup chopped yellow peppers
½ tsp chaat masala
½ tsp oregano
2 tsp chopped coriander
Salt to taste
4 slices of brown bread
2 tsp Butter
Pinch of black pepper

For Aloo tikki
250 gm Boiled potatoes
¼ cup chopped carrots
1 tsp chopped garlic
2 tsp chopped onions
¼ tsp chilli powder
¼ tsp chaat masala
¼ tsp turmeric powder
Salt to taste
Pinch of black pepper
2 tsp chopped coriander
3 tsp bread crumbs

Method:
1. For the vegetable dahi sandwich, take all the ingredients besides the butter & brown bread in a bowl & mix well.
2. Now take a slice of bread to add a generous amount of the mixture & top with another piece of bread.
3. Spread some butter on the top side of the bread & grill either on a tava of sandwich bread till its golden brown.
4. Cut & serve with fruit, chips & dry fruits
5. Now For the Aloo tikki, take all the ingredients in a bowl, mix well & form tikkis
6. Pan fry till golden on both sides & remove
7. Pack with some chutney, fruits, chips & dry fruits.
8. Gobble! Gobble! Gobble!
