Ingredients:
1 cup (115g) pecan halves, coarsely chopped
1 1/2 cups (190g) all-purpose flour
1 1/4 cups (115g) old-fashioned rolled oats
1/3 cup (65g) sugar
1/3 cup packed dark brown sugar
1 teaspoon kosher salt
1/2 teaspoon baking soda
3/4 cup (170g) unsalted butter, melted
1 cup (320g) raspberry jam

But often, in an effort to save money, it can be easy to go underinsured. The result? Higher risk. This article will go into three reasons why families go underinsured and why it’s not the best idea.
Insurance is a Big Expense
Insurance is a big expense, and there are many policies that can add up. But carrying appropriate amounts of insurance can pay off. In terms of car insurance, it can be easy to ask yourself if it’s really worth paying more each month for the more expensive coverage.
It may have been worth it to pay for cheaper car insurance when you were a college student driving a really old car. But with your kids in the back seats, paying a little more each month for car insurance could save you big in the case of an accident that causes major damage to your car or that results in injury.
They Underestimate the Risks
People can also go underinsured because they underestimate the risks or their liability in a situation. Particularly, families often underestimate the risks that they take when they do not have adequate homeowner’s insurance, or when they are renting. Common causes of home damage including floods and fires can result in extremely expensive repair costs for you if you don’t have adequate insurance—whether a homeowner or a renter.
When it comes to finding adequate renters insurance, people can be deterred by policies that don’t seem to protect the renter’s interests as much as they would like. But in reality, a renters insurance policy can cover various expenses besides lost possessions. Having good renters insurance could save you a lot of money in the case of major damage.
They are Unaware of Available Resources
Shopping for insurance, no matter what kind, can seem like a complicated process. Often, when you don’t want to spend a lot of money and when there are so many policies to consider, it can be easy to forget to look at other resources as well. Before you commit to a policy, or if you are genuinely concerned that you won’t be able to afford adequate coverage, do your research—there are resources out there.
With so many types of insurance including car and home insurance as well as life and health insurance, it can be easy to get lost in the details. But, going underinsured can be risky so it’s important to take time to do your research and ensure that the policy you are considering will provide you with enough coverage.

Ham & Swiss Hand Pies
1/2 cup deli ham, chopped
1/2 cup Swiss cheese, shredded
2 green onions, finely sliced
1/2 red onion, finely diced
1/2 red bell pepper, finely diced
1/2 yellow bell pepper, finely diced
1/2 package (4oz) cream cheese, room temperature
1 cup chicken, cooked and shredded
2 tsp taco seasoning

► VEGAN B.L.A.T. SANDWICH
2 slices sourdough bread
1 avocado, mashed
1 Roma tomato, sliced
¼ cup romaine lettuce, chopped
6-8 slices tempeh bacon* (see below)
handful of microgreens
Spread mashed avocado onto both slices of bread.
Layer on sandwich fillings, finishing with a handful of microgreens.
Slice sandwich in half, serve, and enjoy!

5 oz tempeh, sliced
⅓ cup soy sauce or coconut aminos
2 tsp smoke flavoring or liquid smoke
½ tsp cumin
½ tsp hot sauce
pepper, to taste
salt, to taste
1 Tbsp avocado oil (for cooking)
Slice tempeh into thin strips (⅛ – ¼ inch).
In a large mixing bowl or flat glass baking dish, combine all sauces and seasonings except for avocado oil. Add tempeh strips and soak for 1-2 minutes.
Heat avocado oil in a pan and add tempeh strips. Cook for 1-2 minutes on each side over high heat, until browned and crisp.
Transfer to a paper towel to cool. Sprinkle with salt to taste, if desired.
Serve warm and enjoy with a tofu scramble and toast! Or, cut into pieces for plant-based bacon bits!
Yields 2 servings, ~16-20 slices total.
► VEGETARIAN CAPRESE PITA
1 wheat pita (2 pita pockets)
½ cup cherry tomatoes, halved
¼ cup fresh basil
⅓ cup mozzarella balls
2-3 Tbsp pesto (see below)
In a large bowl, combine tomatoes, basil, mozzarella balls, and pesto. Toss to coat.
Stuff caprese mixture into pita pockets, serve, and enjoy!
Pesto Recipe:
1½ cups fresh basil
¼ cup pine nuts
⅓ cup parmesan
⅓ cup olive oil
¼ tsp salt & pepper
2 cloves garlic
(3 ingredient version would be: basil, oil & salt)
Pulse everything except oil in food processor. Blend and add oil to emulsify. Lasts 1 week in the fridge.
► (COLD) PIZZA PRESSED SANDWICH
2 slices brioche bread
2-3 Tbsp pizza/marinara sauce
2 mozzarella cheese slices
8-10 pepperonis
¼ cup spinach leaves
1-2 bell pepper rounds
¼ cup mushrooms, thinly sliced
1-2 Roma tomato slices
2 Tbsp shaved Parmesan
Assemble sandwich and press using panini press.
Allow to cool before serving and enjoying cold!

Peachy Yogurt Parfait
1 peach, pitted and diced
1 tbsp honey
¼ tsp cinnamon
¼ cup Blue Diamond Honey Roasted Vanilla Almonds, chopped
1 cup vanilla yogurt
In a small bowl toss peach with honey and cinnamon.
In a mason jar layer peach mixture, then almonds and the vanilla yogurt. Repeat.
Top with almonds.
Enjoy!
Savory & Spicy Trail Mix
½ cup pepitas
½ cup sunflower seeds
½ cup Blue Diamond Habanero BBQ Almonds
2 tbsp tamari OR soy sauce
½ tsp garlic powder
¼ tsp onion powder
cayenne to taste
In a large bowl combine all ingredients and toss until they are evenly coated.
Pour onto a baking sheet.
Bake at 300°F for 5-10 minutes.
Enjoy!
Chocolate Cherry Chia Pudding
1 tbsp chia seeds
¾ cup almond milk
1 tsp cocoa powder
1 tbsp agave nectar OR maple syrup
½ cup cherries, pitted and finely chopped
2 tbsp Blue Diamond Dark Chocolate Almonds, chopped
In a small bowl or mason jar combine chia seeds, almond milk, cocoa powder, agave and cherries.
Put mixture into the refrigerator and allow it to sit for at least four hours or until it firms up.
Top with more cherries and almonds.
Enjoy!
