So you guys wanted more cooking videos and here you have one! I filmed what I took to uni for four days to give you some recipes plus some general ideas of some snacks and things to take with you! I hope this helped you out with some lunch time inspo and as you can see I am a very very hungry person…
Recipies
Soba Noodle Sauce
1/2 Tbsp Ginger
1/4 cup peanut butter
Pinch coriander
2-3 Tbsp water
1/2 tbsp maple syrup
1 tsp soy sauce
1 clove of garlic
1/2 tbsp lime juice
Caesar Sauce
1/2 cup soaked cashews (boiling water 1hr)
1/4 cup water
2tbsp olive oil
1 tbsp lemon juice
1/2 tbsp dijon mustard
1 small garlic clove
1/2 tsp garlic powder
1/2 tsp Worcestershire sauce (vegan, i used spring valley)
2 tsp capers
salt and pepper to taste

RECIPES:
– DIY TRAIL MIX –
1 cup raw cashews
1 cup raw almonds
1 cup pumpkin seeds
1 cup pistachios
1/2 cup golden berries
1/2 cup goji berries
1/4 cup chocolate chips
Stir everything together, portion out into 1/2 cup servings and enjoy!
– SPINACH HUMMUS DIP –
1 can chickpeas, drained & rinsed
2 cups spinach
Juice of 1 lemon
1/4 cup tahini
1 large garlic clove
Sea salt to taste
Rice Cake Thins for serving
Process all the ingredients together in a food processor until smooth and creamy. Spread on rice cake thins and top with hemp seeds and sesame seeds. Enjoy!

Perfect Pesto. This is my favorite dish to take to a picnic or BBQs. This recipe is colorful, quick, and easy. Fill it with any veggies you like. My all time favorite is to add Vegan Feta on top.
